Kinco: Bitter but Delicious

The impact of the Covid-19 pandemic has forced many people to change professions, including a man who used to work in a travel agency. Now, he sells "sego kinco," a type of rice dish made from bandeng (milkfish) offal.

This man from Kudus Regency, Central Java, switched professions to become a sego kinco seller after his previous job in the travel agency was affected by the Covid-19 pandemic.



"At the beginning of the pandemic, I worked in a travel agency because during this pandemic, travel agencies were basically shut down, so we had to adapt to make a living. Opening a food stall crossed my mind," said Arus Harhara, the owner of the sego kinco stall, when interviewed at his stall in Loram Kulon Village, Jati District, on Wednesday (September 15, 2021).

From the observation at the location, the sego kinco stall appeared simple and spacious. Arus, as he is called, was busy serving customers ordering nasi kinco. He skillfully prepared the nasi kinco dish.

The bandeng offal was already prepared in a bowl. Arus then prepared the ingredients for making sambal (spicy sauce).

He fried a mixture of shallots, garlic, and chili to make the sambal. Next, he mixed the bandeng offal with the fried sambal in a frying pan.

Once ready, Arus served the kinco, or bandeng offal, with rice. The nasi kinco was served to the customers.

Arus explained that he opened a sego kinco stall because he enjoys cooking. Another reason is that nasi kinco is rarely found in other areas.

"I opened this stall because I enjoy cooking, and I chose sego kinco because it is an authentic dish. Not all regions have it," explained Arus.

Arus also mentioned that nasi kinco has health benefits. Especially for the body's health, as bandeng fish contains omega-3 fatty acids, which help prevent blood vessel narrowing.

"And kinco itself, or the bandeng offal or the contents of the bandeng's stomach, is also beneficial for the body because it contains omega-3 fatty acids, which help prevent blood vessel narrowing and reduce cholesterol levels," explained Arus.

Arus set a relatively affordable price for his nasi kinco. One portion of nasi kinco is priced at Rp 13,000.

"It's cheap, one portion is priced at Rp 13,000, and it's enough to satisfy your hunger. People usually want more," said Arus.

He admitted that he can sell dozens of portions of nasi kinco in a day. Customers even come from outside Kudus.

"Usually, the available stock is sold out because there are so many customers. If there are 20 or 30 portions, they will all be sold out. Some people eat here, while others take it home," Arus explained.

"We have customers from other areas like Semarang and Pati. There was even a group that ordered sego kinco along with sego kepel," he added.

One of the customers, Kiki Budi Utomo, expressed curiosity about nasi kinco. According to him, the nasi kinco made by Arus tastes delicious and not bitter.

"This isn't my first time here. I've been here several times. This kinco doesn't taste bitter, but it's incredibly delicious. The way it's cooked is different, that's why I come here. It simply tastes great," said Kiki when interviewed at the location.
